Intensive, multi-level ice carving instruction is available. Over the past 30 years, Paul Germain has developed, researched, and perfected the "best of the best" design and ice carving techniques from his own experience - and from around the world! Condensed into comprehensive training formats, each program includes dynamic, hands-on, intensive training in the art of ice carving.

Note: Due to the highly concentrated and intensive nature of each level, this program of instruction is specifically designed to be taught in five separate sessions throughout the year. This will enable students to practice what they have learned in preparation for the next level. However, we realize that there may be circumstances (such as a student's previous ice carving experience) which could facilitate achieving several levels in a shorter period of time. In such circumstances, we will be happy to adapt instruction in order to accomodate your particular needs.

Each instructional level in the Master's Program is available year-round.

Master Ice Carver Program

Designed to be the "Rolls-Royce" of professional ice sculpture design training, our comprehensive Master Ice Carver Program teaches a broad range of ice carving skills and technologies needed by experienced chefs and ice carving entrepeneurs who want to excel in the hospitality/culinary industry - or dramatically grow their own commercial ice sculpture enterprise.


Note:
This program requires that the carver be in excellent health,
and must be capable of working with heavy materials
and equipment for prolonged periods of time.

Features One-to-One Instruction

1 ice carving instruction Master Ice Carver Program - One Star Level- $2,500
20 hours of advanced ice carving instruction with an emphasis in multiple level engraving, ice painting, and closed-cell inlay work

Prerequisite: Professional Ice Carver Program or commensurate experience


 2 ice carving instruction Master Ice Carver Program - Two Star Level - $2,500
20 hours of advanced ice carving instruction with an emphasis in highly realistic human portraiture
Prerequisite: Master Ice Carver Program - Level One

3 ice carving instruction Master Ice Carver Program - Three Star Level - $2,500
20 hours of advanced ice carving design and instruction with an emphasis in creating custom ice bars, luges, vases, and food displays
Prerequisite: Master Ice Carver Program - Level Two

4 ice carving instruction Master Ice Carver Program - Four Star Level - $2,500
20 hours of advanced ice carving instruction with an emphasis in speed carving and highly artistic custom design for ice carving competitions
Prerequisite: Master Ice Carver Program - Level Three

5 ice carving instruction Master Ice Carver Program - Five Star Level - $5,000
20 hours of instructional methodology and consultation in preparing the carver to become a successful trainer in the art of ice carving.
Prerequisite: Master Ice Carver Program - Level Four

Sous Chef Ray Valdez, from the Harris Ranch resort in Coalinga, California, earns his One Star rating in AICD's Master Ice Carver Program.

Chef Valdez's training included guidance in multi-block custom design - which was appropriately tailored to the theme of Harris Ranch.



Each level of this program includes the use of all carving and specialty equipment, materials, 20 ice carving books, computer aided design, crystal clear Clinebell ice blocks, and many other resources.


Note:
All tools, ice, artwork, resources, and supplies used for instructional purposes are considered the property of AICD and are to remain at the AICD facility. AICD reserves the sole right to discard, donate, or raise funds for any ice sculpture completed through its courses of instruction.


Ice carving instruction includes hands-on experience with many of the most advanced and celebrated techniques used by professional ice sculptors today. This power-packed program of ice carving instruction is tailored to the specific needs and skills of the individual carver - whether new to the art, an experienced carver, or a career-oriented instructor. Carvers will design and create state-of-the-art ice sculptures as they advance through each level.

Each graduate will receive an AICD "Master Ice Carver Program" certificate with gold stars to indicate the level of training achieved.

upon successful completion of the entire program.

Our private, one-on-one instruction is available for highly motivated ice carvers who want to advance at a rate that is optimum for their learning style, skill, and level of experience. Private instruction can be adapted to suit the individual carver's schedule.

AICD also offers the following programs of instruction:



NICA Membership

We encourage and honor membership in the National Ice Carving Association (NICA). When you have a written recommendation from a NICA representative, AICD will sponsor and pay for a Student/Carver Membership in NICA for one full year upon successful completion of the AICD Master Ice Carving Program or the AICD Professional Ice Carver Program.

Special Scholarships and Discounts

We also encourage and honor membership in the American Culinary Federation (ACF), and the Professional Chef's Association (PCA), as well as other organizations committed to the promotion of ice carving in the hospitality and culinary insdustries.

When you recieve a written recommendation from a representative of the American Culinary Federation, Professional Chef's Association, or other professional culinary association, a 10% Scholarship for tuition is available for the Master Ice Carver Program and the Professional Ice Carver Program at AICD. This scholarship cannot be used in conjunction with other scholarships or discounts.

A Culinary Student Scholarship of 10% for tuition is available for the Master Ice Carver Program and the Professional Ice Carver Program at AICD. This scholarship is available for carvers who recieve a written recommendation from a representative of one of the schools on our Top 65 Culinary Schools list. This scholarship cannot be used in conjunction with other scholarships or discounts.

Discounts for enrollment in two or more levels - AICD offers a 10% discount for pre-paid enrollment in two or more levels of its Master Ice Carver Program. This discount cannot be used in conjunction with other discounts or scholarships.

Paul Germain is a professional ice sculptor and art educator. He has been developing and researching innovative ice carving techniques and instructional methods for over 30 years.

Paul (who also owns Ice Sculpture World) has masterfully combined his years of experience in the ice carving and hospitality industry with 20 years of teaching as an award-winning, professional art educator. His highly developed curriculum and dynamic hands-on training methods have created a modern standard for professional ice carving instruction.

Paul’s unique qualifications include a Bachelor’s degree featuring the university’s highest honors in Art. He is professionally credentialed by the state of California to teach Art/Design, and has also earned a Master’s degree in Instructional Leadership - which originally provided the skills needed for creating the curriculum standards of the Academy of Ice Carving and Design over 17 years ago.

As an art educator, his students' art works have been critically acclaimed, and have been displayed in venues such as the Fresno Metropolitan Museum of Art. They have also been honored with "Best of Show" awards for two years running in the Congressional Art Exhibit in Washington, D.C.
